Whats The Best Boxed Mix?

I am wondering why someone would go to a scratch baker and request a box mix...

Unless they were loyal to a certain mix, and then request it. Did I miss something? Why does the OP have to experiment with several mixes for one cake when she is a scratch baker?

Most Southerns will tell you, you can't use regular frosting with Red Velvet cake. You use a creamer less sweet frosting. And it just wouldn't be Red Velvet cake without loading it with Coconut.




I have yet to find a recipe better than the Southern Red Velvet (scratch) that I use. I love this recipe, becomes you make it similar to box...mixing dry then adding liquids. Cream cheese frosting all the way with this one...although some prefer the Kay frosting.

Now I do have to say, I've never heard it a must-pair with coconut! Usually I will see the variations with pecan, but never coconut.

Fanny Farmer's cook book from the movie Fried Green Tomatoes has wonderful receipes. That's the Red Velvet receipe I use. But one day I tried DH's Red Velvet and I have to admit it taste like homemade.

Speaking of Coconut the best Coconut you can buy is Baker's in a can. Here it is very hard to find. I found a drug store in a small town that sells it. When I go in there I buy every one they have- that's not much.

I started baking when I was 13 I still have my first cookbook. Ok, I know you're dying to know so I'll tell you, that was 40 yrs ago.

I always baked from scratch. Loved trying new receipes. But I have to tell you I love box cake so does my family. So I've thrown in the towel.

I love homemade pancakes. They are so light and fluffy, hummmmm. My family - no way. They want the mix that you just add water. What has this world come to?

Janette, we all love the "just add water" pancake mix too! Of course I just add water and vanilla and almond and sometimes berries and.....well you get the idea!

Sometimes I add buttermilk to the just add water pancake mix, YUM! Add berries and vanilla too, heaven!

I usually buy Duncan Hines, but it tends to dome more than the pudding the mix varieties. The yellow DC with the adding of pudding mix and sour cream makes a great cake.
