How Long?

I am new here and have been wondering around the site for the past month or so. I am about to do my first major cake. How long ahead of time should I bake the cakes before I decorated them if I don't want to freeze them?

You know, I always, always freeze my cakes (makes them EXTREMELY moist) not to mention so much easier to work with. However, I have (when in a rush) bakes a cake, wrapped it good in saran and foil overnight and it was fine. I would imagine you could do it a day or even two ahead? But the refrigerator might dry it out so be careful if you store it in the frige.

I also try to get all my cakes into the freezer at least overnight. I don't always, but I sure try to!
