I need to make a Lemon flavoured cake, I have a basic white cake recipe that works and taste great and was just going to add some lemon rind/zest but wasn't sure if I should add real lemon juice or lemon essence.

I sub out 1/4c of the liquid in the recipe (usually buttermilk), for lemon juice and add the rind of 1 lemon per batch. HTH!
I usually do a couple tablespoons of lemon juice and the zest of a lemon. My standard response from people is, "I don't normally like lemon cake, but..." and then they stuff their tummies full of it. I also put lemon juice in my buttercream. That sweet-tart flavor is addictive.
