Not sure if the cake recipes from Vegan Cupcakes Take Over the World book can be used for regular sized cakes but those recipes are all FABULOUS!
from VCTOTW book (this is a great recipe):
Vegan Buttercream:
1/2 C shortening ( I used hi-ratio)
1/2 C soy margarine
3 1/2 C confectionerâs sugar (use vegan ps, regular is not considered vegan)
1 1/2 tsp vanilla
1/4 C soy milk or soy creamer
Beat shortening and margarine until well combined and fluffy. Add the sugar and beat for about 3 minutes. Add the vanilla and soy milk and beat for another 5 to 7 minutes until fluffy.
I have a good vegan chocolate cake recipe that I've used a few times but I can't get to it now. I'll post it later.
I usually use a Duncan Hines frosting that's vegan. And of course, I can't think of the name right - holy brain dead me! You can find the name on PETA.org in their "I can't believe it's vegan" food list. I think it's Homestyle but only certain flavors are vegan so check the PETA site.
