So, Edna, how can we avoid having air bubbles in our buttercream? Any suggestions? Is it the hi-ratio?

I think it depends on the recipe you use. But going here for very basics students.. Using wilton..DOnt use whisk attachments.. they bring air...dont mix in high for the same reason. Have your sugar already sifted and as soon as you put the last cup and is almost mix finish mixing by hand. Hight Ratio does make a bg difference.
