Need Help With Curd Filling...it's Not Getting Thicker!

Please help!
I'm making the pineapple curd recipe from the Cake Mix Doctor's cookbook.
1 15 oz can pineapple with juice
1 T lemon juice
1 T flour
1/2 c sugar
1 stick of butter, cut into pieces
3 large eggs
Mix in saucepan over medium heat (do not boil). 6-8 minutes until thick.
Help!! It's not working! It's as thin as water. I added about 4 t cornstarch dissolved in cold water after I had been stirring the stuff for 25 minutes! Still not thicker! What do I do?
might just be your recipe, you need to boil flour for the thickening properties to fully develop, whereas cornstarch thickens fully right before boiling. HTH
If it is as thin as water, that sounds suspicious, especially after the cornstarch. However, sometimes it needs to fully cool before it thickens. Like sometimes HOURS. I make a raspberry filling and really it is best to leave it overnight to thicken.
