I have a bride who wants cheesecake as the middle cake (three stacked cakes) in her wedding cake. I don't even know where to start. Can this be done? Do you recommend it? How in the world would I ice it icon_confused.gif ???

You can do it, but I would suggest insisting that the cheesecake be the bottom layer. Cheese cake is HEAVY. I have covered cheese cake in both buttercream and fondant. It will be sweet.
