I am looking to get a commercial convection oven, but wonder if i should get a gas or electic model... what would you all suggest??? obviously want to go with the one that'd save me more on money!
what kind of space are you in? I am going to put a licensed kitchen in my basement in the (hopefully near) future. The health inspector said I should go with electric because otherwise I would need to get a hood.
I guess I don't know what would save more money. But if you already have hook up for one or the other, I would probably go with that unless like in my case electric is the way to go.
i went electric because of the vent hood...the building inspector said it would cost about 5 thousand dollars to install one.
I don't have a commercial oven, but man, I couldn't have an electric one. We had one once and I HATED it.
So I guess my advice would be to go with which one you work best with.
And yeah, I'd pay the extra $$ for having a gas stove.
