I have a gluten free recipe that calls for xanthan gum. Can I substitute a veg gum that contains gum acacia & xanthan gum? Would I adjust the amt used? Baking gluten free is a headache. Thanks.

In a pich it should be fine. I would add a little extra. Gum acacia acts like a stabilizer where Xanathan gum is an emulsifier...
