There are lots of ideas in the galleries that you can look at to get some ideas of what kinds of sculptures you are interested in learning.
I do buttercream sculptures, carve my cake at room temperature, and several other things that not everyone else does the same. You'll find a lot of different styles, and when you find what is comfortable for you, run with it!
Cake sculpture is a lot of fun. Start with sturdy cake no matter what your preference is for covering it, and remember that tall sculptures need internal supports - beginners often forget that and the cakes can become structurally weak.
