I have an opportunity to do a cheesecake wedding cake and was wondering if enyone out there has had experience making one 12" in diameter or larger.....concerned about center being too soft and outside being too done, even if baked in a water bath.....any ideas or suggestions? need to know as soon as possible.

I have baked a 14" with a 16" pan as a water bath. It came out beautifully.
