Any Suggestions On What Frosting To Use?

Does anyone have any suggestions on a good frosting recipe for 200 cupcakes? I have a friend who wants me to do her cupcakes for her wedding and I am lost on a good recipe to use. The wedding reception will be at a boat dock in July, and I am concerned about using my whipped frosting recipe not only because of the dairy, but I'm sure it'll be humid. I need something that can be vanilla, and I can convert to chocolate as well. Any suggestions would be very helpful, I am a bit of newbie to some of this. I need something close to whipped buttercream taste. Thanks!!

but I was about to post about the same thing. I recently used a bc that has Meringue powder in it...it was for kids. They didn't really like it.
And I 've noticed a lot of people use all butter bc for cupcakes...but I'm wondering if they can hold their shape if I use a 1M tip and if it can take the heat and humidity.

Rich's Bettercreme is a whipped frosting/filling that is shelf stable for about 5 days. Don't know how well it handles high heat & humidity...

I would check out wiltons website for some recipes. But I think the recipe from sugar shack is a good one. It uses creamer instead of water. Hope this helps. good luck with all those cupcakes, congrats.
