Licensed Kitchen In Home?

I live in Michigan, which says that we cannot sell food from a personal kitchen. That leaves 3 options (that I can think of so far...) 1. Buy or rent a storefront with licensed kitchen. 2. Rent time/space from a licensed commercial kitchen. 3. Contact the health department and build a licensed commercial kitchen within your own home, following their requirements.

Option #3 is very interesting to me. I am the primary caregiver for my children and my husband works 2 jobs. Leaving the house/finding childcare is really not an option at this time.

Are there other people out there who have/are considering this option? What are the pros and cons? Anyone out there have a story to tell? I'm trying to be realistic about this...
