I am new here and have been reading posts about Hi-Ratio shortening.What's the differnce and if there is one which do you prefer?And can you subtitute one for the other?Thanks

I prefer hiratio because it is creamier and I don't think it leaves as much of a greasy feeling on the roof of your mouth.
