Can You Freeze Egg Yolks?

I want to try the Italian meringue buttercream which calls for 5 egg whites. Since I have no reason to make custard anytime soon, I was wondering if I could freeze the yolks? I hate to just waste them and throw them out.
What do you all do with your yolks when they have been divorced from their whites? icon_confused.gif

Yes you can when I was working in a bakery we recieved our egg yolks in frozen cartons and had to thaw. I use the carton of egg whites to make my IMBC there is enough for 2 recipes in a carton.

You can freeze the yolk and egg whites seperate or scramble a little and freeze whole. If you put into ice tray and freeze in cubes you can pop out store in ziplock freezer bag. 1 cube should equal 1 egg ( 2 oz. you can weigh to be sure). Thaw and bring to room temperature before using.

Wow, this is great news. I have been using a recipe whick called for 10 yokes but only 4 whites. I have been throwing out the whites. How long are frozen yokes and whites good for when frozen seperate?
