I'd like to use a cake extender, but I'm not sure why!! Nor do I have a recipe for one! I know you add sour cream and pudding mix, but I'm not sure how much of each. I will be using a DH boxed cake mix. Could someone please give me a recipe for such an extender, and tell me what they're used for. Thanks!!
The extender recipes are used for when you need just a little extra cake batter but not as much as a whole new box of cake batter. For example, the 12" round cake pan needs 1 DH box mix plus a little more to fill it- use the extender recipe. Mine is very simple. To one DH box mix along with what the box recipe calls for, add:
1 cup cake flour
1/2 cup granulated sugar
1 egg
Mix as box directions say. If you feel for some reason the mix is a little on the thick side, add a little water till you get the right consistency. Bake as box directs.
I highly recommend the Super Enhanced Cake Mix. It makes an ordinary white cake mix so velvety, with an extraordinary texture. It also stretches a box mix (4-5 cups of batter) to 7.5 cups of batter, perfect for a 9x13 or two 8" rounds.
