So, I finally have my "commercial" kitchen done in my basement. I am waiting for the health inspector to do his final inspection, he has done a preliminary and said it is okay to advertise and start taking orders - YEAH! But - my new kitchen hates me. Every time I make MMF down there I have air bubbles in it. I have changed nothing about the way I make it or the ingredients. Also, my royal icing hates me, I can't get it so I can pipe a flower! If I add more water it gets too runny - I cannot find the happy medium.
The only differences I can think of in my basement is that it is about 5 degrees colder than my upstairs and maybe a little more humid. Does anyone have any suggestions to solve these two problems? I need quick answers as I actually do have orders coming in already.

I had thought of the dehumidifier - hopefully there won't be any issues with that with the HD.
