Stand Up Trees

I'm making a dirt bike theme cake, trails through the woods etc. What is the best way to make stand up trees? I thought i'd do the trunks out of modeling chocolate (would this work?) but what about all the leaves?

I just looked up some trees for you. I found kjb made a cake with some stand up trees as did Lynne. Maybe one of their designs will work for you. I would think you may be able to use pretzel rods for the trunk and just paint over them with chocolate buttercream for the trunk...and the tops can be fondant. I will keep looking...my kiddies just went to bed so I have a few minutes to look around anyway....

I have seen many trees that were piped onto sugar cones to look like evergreen trees. I've also seen the cones placed on top of pretzel rods to give them some height.
