To make gray you can use just a little bit of black gel color until you get the shade of gray you want. I perfer Americolor over Wilton colors but either would work OK.
12 x 18 will give you 54 2x2" pieces so if you want to stack it just to give it a little more height per piece (and people might tend to take small pieces), you should be just fine.

are you wanting gray or silver? you can still make the icing gray and use a little luster dust to give it that shimmery silver shine
