I have an idea to make my daughter a birthday cake. We are starting her in figure skating lessons around her 3rd bday... and I saw some really cute ballerina cakes with full ruffled tutus in the galleries. The main cake was the tutu. I figure I can easily make the ballerina a figure skater and set that figure cake on top of a larger cake to make into an ice rink type thing...

Anyway, what is the best way to layer those fondant ruffles along the side? How long should the fondant be so that you can't see the buttercream 'glue'... and also - is it buttercream or would I need royal icing for a firmer glue?

Any help at all - thanks...

Hi! I actually made one in that style. I used Rolled Buttercream fondant for the skirt and piped the ruffles on with buttercream. I used a petal piping tip and slowly turned the cake on a revolving cake stand as I piped starting with the bottom layer first. Not sure what the other ladies used but that worked well for me. I'll be right back with a pic.......

OK, she's the one on the left.
It's a slightly different effect than the fondant ruffles but I'm lazy and this worked just fine for me lol

Hope that helps some?!
