I did a search on this subject, but found nothing. Anyone have ideas or tips on flavouring IMBC. Fresh fruit, jam, preserves???? Anything would help.
Thanks,
Laurie

I have used the sleeve filling in strawberry, raspberry and lemon to flavor, I just squirted some into the finished icng and tasted as I went along until it was the flavor I wanted. I have also tossed in whole fresh raspberries and it is very good but I would only use these suggestions as fillings, not to ice a cake. I don't think you would be able to get the icing to smooth well with the fruit added to it. Other than that, you could flavor with any extract you like. Spice Barn on line carries some really exotic extracts, hazlenut is good, as well as the butter pecan. You could also flavor with your favorite liquere, Kahlua, Frangelico, can't think of the orange flavored one, Baileys or a caramel. Again, I would only use those as fillings because most will change the color of your icing to an ivory or ecru color.

I made the BEST strawberry buttercream with IMBC. I used the strawberry puree out of cake bible and added that to my IMBC. I used it as a filling but it could be used to frost the cake as well.

I can only tell you what I've used with success...Melted and cooled chocolate, Fresh lemon juice, Fruit Purees, Fruit Oils and Extracts.
Hope this helps!

Thank you all. I'm always scared to try new things. I figure I'll mess it up.
Thanks again,
Laurie
