Can anyone offer a good and hopefully quick chocolate mousse filling recipe?
One that is tried and true please and that preferably does not contain cool whip as an ingredient.

What's wrong with the 4+ star rating recipes in in the recipe section? Not all of them use cool whip...
I like to use 2 c. heavy whipping cream to one box of instant pudding. Whip together makes a nice mousse. needs refrigeration though.
If I'm only doing thin layers, I use a whipped ganache rather than chocolate mousse....very quick and easy! You need to use a good quality chocolate for this. This is enough to fill 3 layers (and usually sneak a crumb coat as well).
Melt 12 ounces of good dark chocolate with 1/3 cup heavy cream in the microwave at 50% in 45 second intervals, stirring well each time. Let cool a bit after it's fully melted.
In a chilled bowl, whip 1 2/3 cups heavy cream to medium peak; add ganache and keep beating until fully incorporated.
This sets nice and firm when chilled.
