What Happened To My Cake? It Fell Apart.

I sifted my cake mix for the first time the other day and when I cut the baked cake it crumbled.

Can I add an egg or butter or something so this doesn't happen again?

I like sifting.

I've sifted mine twice... it makes no difference that I've seen except it makes the powdered mix even more powdery... I haven't noticed a difference in the finished product at all... I would suggest not sifting and see if that helps.... What brand of cake mix are you using?

Personally, I would only sift if the recipe calls for sifting.

Hmm. I find it very odd. What flavor was the cake mix?

Whenever I used cake mix, I sifted and nothing negative happened. icon_confused.gif

I use the enhanced recipes from CC and SIFT EVERYTHING!! It is amazing to me what is on the bottom of my strainer/sifter when I sift, especially sugar!! I have never had a problem with my cakes crumbling. Are you totally cooling them before handling?? Since I never use a straight cake mix without any additions, the only thing I can think of is cake temperature! Hope you figure it out!
