I am looking for a BC icing that would be good for kids to use. It needs to hold sprinkles on the cake so I'm not sure if a crusting BC would be good or not. Any suggestetions would be greatly appreciated.

Check the recipe section on this site. The buttercream icing using just shortening is a good stiff icing and retains its shape and also doesn't require refridgeration it can be reused many times over and over in cake classes for practice for that reason. It does crust when left out in the air for any length of time but I don't think that would be a problem.
