How about something like this cake that I did recently and make the symbol out of MMF and let it dry for a topper. You could reverse the colors and make a red cake with white swirls and paint the swirls gold with luster dust and put a gold ribbon around the bottom edge.

Wow, that is beautiful; but my customer specifically asked for a sheetcake with a chinese symbol on it.

You can look for a stencils at any craft store with chinese characters. They are pretty & they comes with bamboo signs, some words like 'Love" , "Peace/Balance", "Energy" and "Eternity".
Another idea is to use the chinese paper cuts. They come in chinese characters, ask his mom wich one does he belong.
