Freezing Question

I need to make about 400 mini cupcakes (well 800, 2 flavors) for samples for a bridal show. Can I make them ahead and freeze? Should I wrap them individually in plastic wrap before freezing or freeze on a sheet pan then put in bags? I was thinking of starting this weekend, the show is Sat the 13th. Thanks for any help, I haven't ever frozen anything for customers before.

I don't know if it matters for this but I bake from scratch. I was thinking if I could freeze then take out next Friday, pipe kisses on top and put on trays.

Advice appreciated! TIA!

wowsers! 800 cupcakes!! you go girl!
baking them in advance shouldn't be a problem, just make sure that they're wrapped up really nicely (so that they're airtight) and you shouldn't have a problem.

You can absolutely freeze scratch or mixes, just wrap w/foil or plastic wrap or get some big ziploc bags and you will be fine. I can't imagine making all those cupcakes without baking in advance and freezing. They also thaw very quickly and will taste like freshly made. Good luck!
