I would appreciate any help with making carnations. This is the first time I need to make them and looking back in the Wilton 1, 2 and 3 class books, there is no carnations......please help.......thank you

Do you want to make them from Royal Icing or Gumpaste? I can help you with either.

Actually I wanted to make them with buttercream. Although I would also like to know how to make them in Royal and Gumpaste......thanks

Here's a link to Wilton instructions on the buttercream/royal icing carnation. You were right, the newer books took those directions out! I never noticed that before. I'll PM you with the gumpaste instructions. If you have any more questions, one ringy dingy will do! icon_wink.gif

For buttercream carnations, I start with a ball of icing on a small square of waxed paper, stuck to a flower nail. I usually use a #102 tip (depends on how big you want the flower). Start at the bottom of the ball of icing and move your hand like you are writing an "M". Keep doing these "M's" around the base of the icing ball. Move up and repeat the "M's". (Each "M" becomes a petal.) You'll probably do about three rows, ending with only a couple "M's" towards the top. For the center, point the tip straight up and down, and squeeze, pulling up. I don't know if that will help (a picture's worth a thousand words!)

With buttercream I use tip #224. Its a flower tip with a little wire inside. When you wiggle your hand and move your hand up slowly as you squeeze the bag - it works perfectly. There is one in my picks of the red flowers. The tiny ones are the same tip with just minimal icing squeezed out!

If you would like the work sheet for gumpaste Carnations pm me your email address and I will scan and send it to you as an attachment. I think done in gumpaste they look very realistic and natural. Here are some on a cake I made for a friend.
