Caramel Filling Didn't Work

Hi Everyone,

I tried the method described by someone here on CC in which you empty the contents of a sweetened condensed milk can in a pan and bring to a boil, stirring...and after 15 minutes or so, you'll have yummy, creamy caramel. Did Not Work!! I ended up with a chunky blob that had "holes" in it. What did I do wrong? Cook too long? Not enough?

I know this is "frowned upon" by some here because I have never made this but I looked it up for you and this website has the directions for the stove top, oven and/or the microwave. Maybe that can help. It does say on the stove with a double boiler. Did you use a double boiler instead of a directly in the pan?

My method is to simmer the can of milk - totally covered with water - without opening it. But it takes something like two hours. Fifteen minutes wouldn't do it. What you aget is a thick, carmelly, rich product.

I usually do the boil method and it works great but wanted to save some hours and tried the 15 minute method and it didn't work for me either. I'll try it again but this time the double boiler method.

I tried the microwave method and didn't like it at all!!! Now, I just use the stove top method; it comes out creamy and easy to spread!!!

I can't seem to get the stovetop method to work for me either. So I guess it's the boil on the stove top for me too. If anyone else has tips on the other way let us know! thumbs_up.gif

I just watched something on tv this morning about this very thing! Martha said she makes caramel this same way by boiling it in a pot, right in the original can!! I have not tried this, but I WIll!! HTH
