ganache? I am recreating the Chocolate Chip Charlotte from The Cake Bible. It looks like the photo below. Anyway, I am recreating it by using the genoise cake as a roll and making mini rolls filled with the chocolate chip whipped cream. Would you cover this?

Thanks,
Kathi

I would probably pipe a single chocolate star onto the outside of the lil' roll--just to give appearance and continuity.

Full covering? Nope.

That actually looks and sounds AMAZINGLY delicious!

The original is amazingly delicious and deceptively easy to do! It just doesn't lend itself to a buffet, which is why I am changing it. It is definitely one of our family's favorites. It is a great "Wow" dessert and I wanted to have a small item with a big "wow" taste on my daughter's Bat Mitzvah buffet this weekend.

Thanks for the suggestion. That is what I was leaning towards.
