You have to remember, America is a relatively new country (a little over 200 years old) as opposed to the thousands of years old some of those European countries are -- and that's where cake decorating started -- in the royal courts of the European countries. So it stands to reason that by the time cake decorating came to the masses it was those who worked for the aristocracy who were teaching the commoners who ended up bringing it over here eventually. Not to mention the fact that they like to do everything different in Europe -- for example in England they like their cakes dry because they like to drink them with ale, so they bake dense fruitcakes, cover them in brandy, wrap them in marzipan to keep the moisture in, then cover that in fondant. Result -- a really rich, dry cake that washes the ale down well! In America, we like everything soppingly moist (oil-based cakes/gooey fillings/pudding in the mix/buttercream on top...) You get the idea. But you're absolutely right -- I live in the midwest and I look to NYC for inspiration. When I was there I figured out that in NYC they look to England for inspiration! And I'm darn glad they do!! ![]()

I know many brides,overhere, just look at US sites to get inspirations for there cakes.
I think it´s like a wave: for sometime the newest and best designs come from the US and than it moves over to England and back again (seems to be a 2-3 year period) So each country inspires the other
