What do you do if the top of the cake is cracked and when you put the icing on it, wouldn't it look bad? If the cake is cracked what do you do?

this is a pretty common problem! There was a thread about this within the last day or two...
you can mend it with buttercream icing (BC) if the crack isn't too bad.
If you have access to Toba Garretts book, she has a spackle paste (sp?) that is basically a combo of cake crumbs, icing, lemon curd I believe and that is all mixed together and used as a paste that will "fix" cracks and flaws.

I would use it if it was a very thin coat and you let it dry before icing your cake with the BC...

is it in one piece? if so. i'd just leave it and let your customer know what happened. If u want give her a couple dollars discount.

I was saying when you baked the cake and it cracked on top and its not smoothed on the top of the cake, so using buttercream is good to use for situations like that?

I usually cut off the top to make it even and then torte the cake and put the top side down on the cake board. I think it is common for the top of the cake to crack....just skim off the top and put it face down!

I always put the top side down, cracked or not, after I level it. The bottom of the cake is perfect from being in the pan, so I use that.


When I level it, I flip it, then use the smallest holes on the grater or a hand-sized zest grater to get any crusty parts off the sides and the top. that way you don't have to cut the sides and it's all still the same size it should be.

oh...I thought the "crack" meant that the leveled cake was cracked..not the top was cracked..
In that case, I just level it off and use the bottom side up.

When you mean level it off...You mean cut it off and level it Or do you mean something else?

Cut the top off to make it flatter. I cut the tops off all my cakes to make them flat and then flip it to the bottom. So the bottom is now the top makes for a nicer looking cakes.
