Hey all! I was just wondering what type of baking method you all use?? As some of you know I have a new gas stove, it also offers convection baking opition. Has anyone done any baking this way? If so how do you like it? What was the baking time difference? Thanks
I use a convection oven (gas), and love it. Mine automatically adjusts the temperature downwards on convection bake, so the baking time is pretty much the same as for nonconvection. (In other words, when I set it to 350 covection bake, it really bakes it at about 315.)
I bake cakes with the oven set for 325, which is really a bit under 300. It takes longer to bake than recipes say, but that is true for nonconvection at 325, too.

I always use the convection feature on my oven when I bake- I generally lower the temp 25-30 degrees from what the recipe says. I find it works better if you make several short cake layers instead of one tall one and torting it- but that's also how I was taught to bake so I'm used to it. It's great for cookies !

I have an electric oven in my apartment, which is probably as old as I am. It is finicky, does not give consistent heat, and is a headache to clean. It took me two weeks to figure out it's routine, so I could bake without burning or underbaking.
I just received a tabletop sized convection oven for Christmas - the Walmart special for about $80. It is the perfect size for drying gumpaste and fondant pieces, and small enough to bake a couple of tasting-sized cakes.
I wish I would have had the transportation and storage for the two full-sized convection ovens that I had seen at the auction - I could have gotten both of them for about $50. Unfortunately, they would never have fit through my front door.
