Help! How Long Can Buttercream Sit Out?

We were supposed to have a surprise baby shower for a co-worker today, but she ended up having to leave early to go to the dr! Now I have a cake with buttercream icing (made will all butter) that I don't know if I need to put in the fridge until tomorrow or not. I just made the icing last night so it was fresh. Will the cake be okay until tomorrow or should I stick it in the fridge?! I never use all butter, but this one time I do....icon_sad.gif TIA!!

Did you make the icing with cream as well? Is the filling shelf stable? Are there any insects (ants, flies, roaches) to worry about?

If it's just the butter that concerns you, it will be fine. Most buttercreams have enough sugar in them to prevent spoilage for a short period of time. HTH!

There is no filling and the cake is in a cake box on a shelf. There are no insects that I am aware of. The bug man comes regularly! lol

I used about 2 TBS of milk to 2 lbs of powdered suger. I figured it would be okay until tomorrow at lunch time, but just wanted someone else's opinion. Thanks again!

You should be fine for a few days. Even BC with small amounts of milk or heavy cream can sit out that long. It is preserved by the sugars like amber said.
