I can say ..

I bake from scratch..

"I can SCRATCH any part of my body as I bake your cake"

lol

I use doctored cake mixes but use scratch for specialty flavors.

I bake and sell from home, I only bake from scratch. I started out selling pound cakes in Feb of 05, Then they started asking for celebration cakes so I took the Wilton courses and finished in Nov of 05.
As far as celebration cakes go, some of my customers don't know or care if it's scratch they just want a moist delicious pretty cake. Then there are others who get excited because it is scratch. [/i]

when there is a large volumn of cakes to bake its so much easier and less time consuming to use a mix any bakery you buy from uses the large bags of mixes but don't seem to watch what brand, there are some pretty bad ones. so as a baker with my own business I use box and doctor it I can get more done them from scratch and having to measure everything.
