Am trying to make MMF ahead to take with me on a trip - I don't know what I did, but this batch came out rather rubbery? It doesn't seem like it needs anymore sugar or anything, just came out rubbery.
Anyone else have this happen ever? I made a few times before and didn't have this problem. Please advise. Thanks!

you know, lately this has been happening to me for no apparent reason. i've been using the same powered sugar/marshmellows (generic brand) so i can't figure out what is going on. at any rate, i switched over to the more expensive name brand ingredients and the problem was solved.

Wow, that's it? I used the same brands I always do and never happened before - any specific brands recommended?
Thanks so much for the solution thumbs_up.gif

I don't know if the brands really make a difference but Ive read to only use the best ingredients. I have done that and not used generics and it has come out just fine. But again Im not sure if it makes that much of a difference. Have you tried dusting it with some cornstarch? I use that when I roll the MMF. Hhhmmm......???????

actually, i just bought the most expensive sugar and marshmellows they had, lol! i didn't even pay attention to the brand name. i just figured that the ingredients in the name brand products would be of higher quality...and they were. not only was my fondant not rubbery but it was also whiter and tasted less sweet. good luck!

Generic can sometimes use beet sugar instead of the cane sugar we need. Stick to C&H - it's pure cane, and should solve the problem. Also, bc can separate when using beet sugar. Generic mm should be fine, but JettPuff works best.
