Problems With Toba Garret's Icing

I'm new to CakeCentral, but I've learned so much in the little time I've been able to spend with all of you. Thank you.

I'm also relatively new to "serious" cake and cookie decorating, but have "experimented" enough to know that I really like Toba Garret's glaze for decorating cookies. In my last few batches of cookies, I've had a problem develop that I can't quite figure out.

Here's my problem: The longer the icing dries, it develops "splotches" of lighter color. It seems to be doing it with every color. The only difference between these batches and my earlier ones is that the temperature in our house is cooler at night than it was in early fall. Do you think temperature fluctuations could be affecting the icing? I've thought about using some kind of reading lamp to speed up the drying time--do you think that might help.

Do you think the amount of "mixing" affects the icing?

The only other question I have regarding this icing is whether adding "glycerin" would keep it more shiny as it dries. I really prefer a shiny finish to a matte one.

I use that icing exclusively on my cookies and can't recall that ever happening to me, so here's another bump for ya!

I had the same problem. The temperature stayed at 73 in my house and my icing got blotchy. I read on another board where several people had the same problem. I switched to Sweet Annie's Cookie Icing and didn't have a problem. Everyone liked the taste of this icing better.

Thanks to all of you who took the time to answer my post.

I emailed TGarrett with my concern and I was surprised at how quickly she responded. Kudos to her.

She suggested that perhaps I wasn't mixing my colors in sufficiently after separating into separate bowls. I haven't add a chance yet to give that suggestion a try.

She also said that cooler temps are good for drying, as well as leaving the cookies uncovered as they dry.

She said that I might also try increasing the corn syrup as I decrease the milk/water for increased shininess and quicker drying time.

karensue--I use this icing almost exclusively. I had the same problems in the beginning. I discovered if I didn't mix the icing long enough, the color would get a bit blotchy and the sugar would crystalize leaving tiny white bumps. I mix well and thin with corn syrup only, no extra milk or water.

I have heard that Toba Garrett is great with PR. I enjoy her books.
