Don't feel bad, I do it all of the time!! I am good for not having enough cocoa powder! Frequently run out of eggs too! Would loan you some eggs if I could!! icon_wink.gif

Agh. I hate it when that happens. When I made a pie a couple of weeks ago I bought everything but a pie tin. So I ended up having an ugly square pie. and I was short on eggs. Maybe we should keep a chicken in the backyard for such emergencies. icon_smile.gif

well I can relate to this story. Yesterday I had a castle cake order for a friends daughters party. Of course I started out late in the morning, and by the time I finally got to the store to buy the eggs and what not, on my way out, the alarm goes off .. grrr .. the greeter checks my bag and while shes doing that the alarm is going off for every person behind me as well! At this point Im so irritated I am walking out barking at my hubby that obviously the alarm is broken and .... BAM ... I drop the bag holding two one dozen cartons of eggs!! icon_mad.gificon_mad.gificon_mad.gif Luckily we checked them right there, and by mircale only two eggs broke, which left JUST ENOUGH for me to rush home and get the cakes in the oven!!!!

It is annoying, isn't it? I started buying cake ingredients every time I shop to stock up.

I typcially have at least 10 boxes of cake flour and 15-20 boxes of icing sugar in the cupboard. I also keep butter in the freezer (usually buying a ton when it is on sale) and I use a lot of eggs generally so I always keep at least 3 dozen on hand.

I did this myself today. I THOUGHT I'd get ahead with my baking for the weekend, so I go to pull out my butter...WHAT??? Only 1 stick??? ONE STICK??? Off to Sam's I went after a delivery and loaded up on everything that I needed through next weekend. LOL.

You can substitute 3T vinegar for 1 egg if needed in a cake! Just an FYI!! I can not tell you how many times I have had to do that! I open the fridge and there is the box that says 5 dozen eggs....only to have 1/2 dozen in there! I should learn my lesson and take the freakin' box out of the fridge when I get to the bottom carton! icon_cry.gif
