I use this recipe, as I don't have a hand mixer to beat the icing while it's on the stove.
Boiled Frosting
1-1/2 cup sugar
1/2 teaspoon light corn syrup
2/3 cup boiling water
2 egg whites, stiffly beaten
pinch cream of tartar
1 teaspoon vanilla
PREPARATION:
Combine sugar, corn syrup, and water. Bring quickly to a boil, stirring only until sugar is dissolved. Boil rapidly, without stirring, until mixture reaches the soft ball stage, or 240 degrees.
Pour syrup in fine stream over egg whites, beating constantly. Add vanilla. Continue beating with rotary egg beater for 7-10 minutes, or until frosting is cool and of right consistency to spread. Makes enough frosting to cover tops and sides of two 9-inch layers. This is very white and like marshmellow cream!
