I read the whole thread on posting pictures for comments, but I need to put this in anyway. I got my first paid wedding cake done (though a friend asked for one earlier in the week , which then became my first, and this my second). Well, I wasn't near as happy with this one as with the one I did earlier in the week, AND, to top it off, it shifted some during transport. It was only a two tier, so I assembled it and then transported. Don't think I'll be doing that again!

I know I'm always my own worst critic, but please let me know if it looks as bad as I feel it did. Any chance it could have looked like it was supposed to be this way (top tier off center)?

I know I shouldn't point this out to the bride, or offer a refund of some kind or anything because I did the work, but should I do/say anything?

I think you are being hard on yourself(but I am the same way hehe)! I honestly don't think I would have noticed it was a little off-center if you wouldn't have said it! It looks beautiful to me and I love the flowers! Jen

I think it's a great cake! From the picture I can tell that it may be a little off center, but I had to look for it. It didn't jump out at me! I don't think you should say or do anything - if they're really unhappy, they'll let you know. icon_smile.gif

I agree with everyone else. I think it is great and if someone says anything thell them that that is the new "thing" !!! Of course, I am a little off center myself! I love the flowers and the overall feel of the cake. Great job!

It's a great cake! Congrats on getting your first couple of wedding cakes! I have my second scheduled for July and maybe another one for Sept. Hopefully the orders will keep coming in!!!

I think your cake is lovely. I've had SEVERAL of my cake tiers be "off centered". Didn't mention it and if anyone noticed....they didn't mention it. One of my friends helped me do a groom's cake recently (Wedding Cakes, the trilogy Grooms' Cake I) it's off centered too; didn't noticed until FULLY decorated. She said "Just tell them it's a "modified" topsy turvy cake!" I agree with estherwheat "it's a new thing!". Hey! It's definitely one of MY things! LOLL

I think it looks just fine but here's a tip for the next time you have a cake like that and want to travel with it-Use a long sharpened (very pointy) dowel just a bit shorter than the height of the cake and use a mallet to tap it thru the cakes and cake boards. That provides stability.

Yes it looks fine! I transport all my cakes assembled. I did a anniversary cake earlier this month 12",10",8" and 6" completetly assembled. Center dowel and away I go!

midialjoje - I think your cake is beautiful! The flowers are very well done. I don't think anyone would notice the cake being off-center. We certainly are our own worse critics. Nice job.

moydear77 - please tell me how you can carry a large wedding cake already assembled. I always assemble at the reception. Just never thought I could carry that much weight. Or is it that you have some handsome stud helping you? LOL icon_wink.gif

No I would never let my handsome stud carry my cake! I use a smbc so it is pretty solid for transport. Yes it is heavy! In my photos I have a bubble cake --I carried that cake in all by myself--Yes it was heavy but for that short time I must have super human strenght!

I did have to put it on a cart because I was going down a level!

thank you all for your kind comments. I now remember reading on here about the dowel down the center---but, of course forgot it here. Unless I use an idea right away, I lose it!!

I'll find out how good/bad it was really at some point soon. The bride's sister's daughter is getting married this summer. She said if all went well, she'd be calling me for that cake. I'll let you know.

I use SMBC
As far as smoothing-I work with cakes that are at least a day old. I fill and then crumb coat. Chill in the freezer until set. I ice the base of the cake with a very thick coat-1/2 inch. I ice the top of the cake and then the top lip of the cake. So bottom edge, very top of the cake and then the middle and top lip. Put back in the freezer. Make sure it is hard-About ten mintes or so. So this is where the scraping comes in. With any flat edge like a decorator triangle you can literally start scraping the excess off. You need a gentle but strong hand. It scrapes right off. Clean your triangle as it will start to build up. If it has a smear look to it then it needs to be chilled longer.
I hope this helps! It is hard to explain but once you do it you will understand!

Ditto. Wouldn't have noticed it from the pic except from you pointing it out. Flowers are awesome!

One time for a friend I made a cake. All my supports were being used for other wedding cakes & I had to use just cardboards & dowels. I was so upset by the end result & crookedness that I ended up giving it to her for free. It was the ugliest cake I've ever made and is not in my photo gallery.

She told me the next day her grandma loved it so much she cried & said it was her favorite part of her 50th anniversary.
