Help!!!!

I was making truffles and did as it said but my chocolate won't set. It is really runny. I took it off the heat and let it set and it won't set! Grrr!!
Can anyone help me?? How can I make it set? Can I add anything to it??

It takes quite awhile for it to set at room temperature. I usually leave it overnight. You can put it in the fridge if you want to speed it up.

I guess I should ask what your ratio of choc to cream was too? Even a 1:1 ratio sets up pretty firm

really? Hmmm. My receipe says to let it cool for an hour and then roll into balls.....

It was one pound of chocolate to one cup of heavy whipping cream. If that is wrong how do I fix it?? icon_cry.gif

That consistency will definitely set up. I dont think an hour really is long enough at room temp. I really find you need several hours. I think if you have time, just leave it overnight. Or stick in in the fridge for awhile, it still will take some time. The first time I made ganache I didnt think it set up either, but it did eventually. Dont worry, it will be fine!

any truffle type recipe I've tried says to put in the fridge for an hour. Try that maybe that will work.
