Does anyone have a good recipe for making MMF? I tried to make some and it was messy. After I melted all the ingredients it took for every to get firm. Maybe I wasn't kneading correctly. What is kneading? I would like to make MMF for modeling and covering cakes. (MMF is less expensive then fondant.... smile) Any help is great!!!!!!!!!!!! icon_biggrin.gif

i believe there is a recipe on this site. I tried it once. Yes it starts out messy...but kneading brings it all together. Kneading is just getting in their with your hands and combining all the ingrediants....the same way you would do with dough.

i use powdered sugar too on my mat instead of cornstarch..and if u do not have a KA mixer, that's ok too..just knead it with your hands..

These directions are great, but don't forget that if you don't have a mixer like that, I just begin by greasing my rubber spatula real good with crisco and incorporating the marshmallow at first. Then add more sugar and start kneading with my well crisco-ed hands. It gets VERY sticky for a long time until all the sugar is mixed in good. Sometimes I have to stop, wash my hands, re-crisco them, and start kneading again (I'll do this sometimes a couple different times). I had a nightmare of an experience the first time with MMF, but after I got the hang of it, it's great fun. Don't use too much crisco, but keep things well greased with a thin layer. Also use corn starch when kneading to help keep from sticking to the counter. Someone told me to alternate between crisco and corn starch and that was probably the best tip I got!
Good luck, keep trying! There's also a recipe for a small batch that helped me get the hang of how it's supposed to feel without handling such huge amounts. It's 1 cup of mini marshmallows and one to two tablespoons of water, melt this down in microwave in 15 second increments. Then add the powdered sugar, about a cup and a half give or take. Maybe try it small first, then once you have the "feel" for it, do the full recipe.

Thanks for all the input, everyone is so helpful. My question is how long do I have to mix the mixture? How firm does it have to be before I let it sit or does it get firmer after it sits a while? Basically I want to know when can I let it sit.....LOL!

Thank you icon_biggrin.gif

Here is the website that I used! Its awesome and the woman who runs the website can be contacted. Her instructions worked perfectly. Once your Marshmallow is melted, pour 3/4 bag of powder sugar in and knead. I use spoons so I don't burn my hands! Then once the marshmallows are covered, dump out on crisco covered countertop. Cover your hands with crisco and start kneading. Knead for 8 minutes. You will see the texture and consistency change. It really does take 8 minutes from when you start kneading. Then you can either use the dough or cover in crisco then cover in plastic wrap then a zip lock bag and let sit over night. Or if you aren't going to use it I then put it in a plastic container in the pantry and it will be good for at least a month!
