I want to make cakes in different shapes by carving, only my cakes are too soft. Does anyone have a good recipe that will hold up to carving without sacrificing taste and moistness.

The recipe for the cake that is good to carve, can I make that cake today for a saturday delivery? It has sour cream in it. I'm going to cover it in fondant.
