I have just bought Wilton's Checkerboard cake pan set so I am keen to take it out for a test drive. In the holiday spirit I was thinking a red/green combo would be nice. That led me to think of red velvet cakes. I was thinking I could dye half the batter red, the other half green. Now the question is, the set comprises of 3 x 9" pans, so the instructions read use three single layer mixes. Would an extended 2 layer mix yield enough batter for 3 single layers? If anyone has a suitably big scratch recipe I would try that too.

i think i used two boxes of cake mix to do this cake.
