I believe it is for the elasticity of the fondant.

i was told it was used to help fondant hold its shape in warmer climates. i don't use it in mine, and it works fine.

Glycerine is added to improve the texture and to aid in staying soft. (If buttercream becomes a bit grainy, you can add a little glycerine to help the granules reabsorb.)

Hmmm, I have to make some Fondant but i don't have the glycerine. I just wondered if it could be made without it and if it would hold up the same.
Guess i will get it befor e i make it..to be on the safe side icon_smile.gif

I've used glycerine to get my gel colors to be a nice consistency...

Thanks for this suggestion. I am using a new BC recipe and I felt that it was a bit grainy...I can feel the granules. How much should I add?

Gel colors...I have a few of the Wilton colors...are they considered "gel"? And what are you using glycerine to adjust the consistency to do? What do you use it for?
