Need Gingerbread Recipe For Cookies

can anyone help me find a great tasteing recipe to make cookies with my kids this coming friday.

Gingerbread Men

Prep: 41 minutes Chill: 1 hour
Cook: 14 minutes per batch

1 cup butteror magarine, softened
1 1/2 cups firmly packed dark brown sugar
2 large eggs
2/3 cup molasses
1/3 cup fresh lemon juice
6 1/2 to 7 cups flour
2 tablespoons baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
2 1/2 teaspoons ground ginger
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground nutmeg

white frosting, candies, and/or raisins for decorating

Beat butter at medium speed with an electric mixer until creamy; gradually add brown sugar, beating well. Add eggs, molasses, and lemon juice; beat well.
Combine 2 cups flour, baking powder, and next 6 ingredients; stir well. Add to butter mixture, beating at low speed until blended. Gradually add enough remaining flour to make a stiff dough, mixing well. Shape dough into 2 balls. Cover and chill at least 2 hours.
Roll dough to 1/4 inch thickness and cut with favorite cutters.
Bake at 350 for 10-14 minutes or until firm but not browned. Cool one minute on cookie sheet. Remove to wire racks and cool completely.
Decorate as desired with frosting, and candies or raisins.
Yeild: 2 1/2 to 8 dozen depending on the size of cutter

*note* I usually switch to my bread hook and incorporate all 7 cups of flour. It makes a nice stiff dough that will allow you to use enclosed cutters with impressions on them.

I made the light and fluffy gingerbread cookie recipe from this site today and they truned out really fantastic! They look so professional when they come out of the oven! icon_wink.gif

They looked store-bought when they came outta the oven. This was the first time I had ever made any kind of a gingerbread cookie and man! They are fantastic!

Thanks for posting the recipe that you used. I was just reading and it says to form into balls and roll in sugar...is this how you did them? I was hoping to find a good recipe for cut-out gingerbread. will this recipe work like that or do I need to find a different one? if this one won't work, what would you recommend for cut-out gingerbread cookies?
