I want to make a chocolate cake with the recipe for the Cake Mix Extender and I don't have sour cream. Any suggestions for what else I can use?

You can use plain yogurt (or nonfat yogurt if you want to cut calories).

you could use cottage cheese if you put it through a strainer and add a little milk to thin it out

What about flavoured yogurt? I have raspberry yogurt and the cake is chocolate. Would that work? Will it give it a slight raspberry flavour or not be noticeable?

I've never tried it, but I would think it would definitely be noticeable. Whether you want to try it and see if it's good is up to you. icon_biggrin.gif

LOL! I just logged on to ask this exact same question (well, different choc. cake recipe).

I have buttermilk and plain yogurt on hand. Is yogurt preferable??

What recipe are you using? My standard chocolate cake recipe is Killer Chocolate Cake and it has buttermilk. A lot of doctored chocolate cake recipes also call for buttermilk instead of water. Buttermilk just works really well with chocolate.

I know...that's why I was thinking of using buttermilk instead, cuz I love it icon_smile.gif. The recipe is the Baking Illustrated Devil's Food cake recipe - I've never tried it before, I usually use the Scott Woolley Clark Fudge Brownie Cake recipe but I wanted to try something different. Hate to use the wrong ingredient if it doesn't make the cake the best it can be., it's for a party where the hostess thinks I make yummy cakes- I don't want to let her down!

If you've never made that recipe before, I would stick with it the way it's written...at least the first time. thumbs_up.gif
