Just had a request for cookies without butter or vanilla...sending overseas to our military

And ideas out there????

I don't have any recipes, but if you google 'casein free cookie recipes' you should get some results. Casein is dairy.

Here's my snickerdoodle recipe......uses shortening and no vanilla.

SNICKERDOODLES    
1 cup shortening   
1 ½ cups sugar    
2 eggs        
2 tsp cream of tartar    
½ tsp salt
2 ¾ cup flour      
1 tsp baking soda    
          
Mix all ingredients. Roll into balls (or use cookie scoop to scoop them into balls). Roll balls in a mixture of 4 Tbsp sugar and 6 tsp cinnamon.

Bake at 400 degrees for 8-10 minutes.

Gingerbread cutouts:

Mix together in a large bowl:

7 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon allspice
2 teaspoons ginger
1 teaspoon cloves
1 teaspoon cinnamon

Mix together and add to flour mixture:

(This mixture will be watery with little lumps of shortening floating around. It looks wrong, but it's not!)

1-1/2 cups dark molasses
1 cup brown sugar
2/3 cup cold water
1/3 cup shortening

Refrigerate dough. Roll 1/4 inch thick. Cut out shapes. Bake at 350 degrees for 11-13 minutes. Cool on pans 8 minutes.


Why no vanilla?

The no vanilla because of the alcohol??? I don't knowicon_wink.gif Thank you all so much...I am gonna be baking for days...4200 total cookies (what was I thinking?)

I made the chocolate rolled cookies from this site and replaced the butter with shortening and used the strong coffee. They were very good!

Somewhere I read that the vanilla odor attracted insects to packages sent to the Middle East. I assume the butter stands a chance of spoiling...
