I am no professional but I have made petit fours once. Let me just say -it was a long process but a great learning experience. I have a picture in my gallery of a groom's cake I did w/ square petit fours and stacked them in a pyramid. I did these with a white cake mix, doctored like you would for a tiered cake, and I didn't fill these. The groom didn't want frosting on them b/c he wasn't into sweets much. I just cut the cakes into squares and then did a coating of quick pour fondant, wilton's recipe, and after that dried I did a top coating of ganache, also Wilton's recipe. They weren't perfect but they tasted great and the groom nearly ate half of them! Good luck!
