Carving Shape From Sheet Cake- Pricing?

Okay, I've been wondering about this. Let's say you were carving the shape of a train (flat) from a 1/2 sheet cake. Would you charge what you normally charge for a 1/2 sheet, even though its less servings after you've carved it...(still had to bake it)

Plus, extra for $ for the work of cutting it out? I've had this come up more often lately.

Yes,, you charge for the WHOLE sheet cake PLUS your carving charges.

It's a legitimate business expense. It's called Scrap Factor. Just because the customer isn't getting it, doens't mean it's not a legitimate cost of preparing the product.

What if you took a 12x18 sheet cake and carved it down to the size of a Twinkie. Would you really only charge $3 because it's a one serving sized carved cake? No..... you have to cover the cost of preparing the 12x18 sheet cake.

I buy a chocolate cup from GFS. The price to my clients is very high because there is a high scrap factor....In a box of 12, at least 4 are always broken. So if I need 12, I have to buy 24. When I figure my pricing per dozen, I have to figure the price for 24 due to Scrap Factor.
