Can You Mix Chocolate Ganache And Raspberry

Hi

Can anyway tell me if you can mix chocolate ganache and raspberry filling together and then fill a cake with it. Will it hold up and the top layer not slip off.

I need to make a "raspberry truffle" filling for a cake and that's all I'm coming up with.
I don't want to waste the ingred. if it won't work.

I have mixed in raspberry jelly and not had a problem. Makes for a great tasting filling.

What I do is put a layer of chocolate ganache and then a layer of rasberry preserve. Yummm. No problem at all and taste great!

You can mix a seedless jelly with a little corn syrup and then stir this into the ganache while it is still warm. If you chill and whip this you will get a stable ganache which will hold the cake together well.

my most popular cake is just that -- chocolate cake layered with a thin film of Smuckers seedless raspberry preserves and the a thin layer of ganache. I put it in the fridge for 5 minutes after adding each layer (that is, after topping a cake layer with the preserves and ganache) to let it firm up. It holds up really well.

When I make choc-raspberry filling, I use the sleeved red raspberry mixed with (you won't believe it) Walmart brand chocolate fudge icing. It's thinner than most fillings I use, but with a good dam, it holds up fine (and is quickly becoming my most popular filling).

LORANN oils! Royal Raspberry! Even with the jam add the oil, you won't regrete it.

Thank you everyone...

I make the raspberry filling receipe from CC ...and was going to add it to the ganache.

Debi - would never have thought of using walmart brand icon_lol.gificon_lol.gif
Will have to try that one... nice and cheap..and tastes great. can't beat that.

I do have the lorann royal raspberry oils.. I thought if I added that in combination of the raspberry filling it might be to strong.. but will try that as well.

Hi idowedingcookies! I'm doing this cake this week, too! When you take your chocolate cake out of the oven, brush a thin coating of seedless jam/preserves on it, it soaks into the cake and is heavenly!

For my cake, I'm then mixing the same raspberry jam into a portion of my ganache while warm and cill until it sets up, then whipping it to a frosting like consistency to fill the cake. I'll use the rest of the ganache to pour over the cake for a sleek look and top with rosettes piped from the filling.

Enjoy, raspberry and chocolate, it's hard to beat that combination!! icon_lol.gif
